Cleaning in Place with Onsite-Generated Electrolyzed Water for Water-Saving Disinfection in Breweries
For many brewers, achieving a product with consistent characteristics is crucial. However, this objective can be complicated by bacterial contamination, which often hinders effective production. Biofilm control in brewery manufacturing typically employs a process known as Clean-in-Place (CIP). This process involves the cleaning of complete pieces of equipment or pipeline systems without disassembly, requiring minimal manual intervention.
CIP systems generally consist of a sequential application of caustic and acid wash steps, followed by a sanitizing step that is essential for eliminating beer spoilage bacteria. The most commonly used sanitizers in brewery CIP include diluted solutions such as hydrogen peroxide (H2O2), chlorine dioxide (ClO2), and peracetic acid.
The dilution process can present risks and may be challenging to manage. Additionally, some sanitizers contain heavy metals to enhance stability, necessitating thorough rinsing with running water to prevent the release of toxic residues. Therefore, there is a need for an alternative sanitizer that does not rely on the dilution of hazardous concentrated solutions.

Venlyt represents an innovative sanitizing method for brewery equipment. Studies have demonstrated that a 30% solution of Venlyt (with a free chlorine concentration exceeding 17 mg/L) serves as a sufficient and effective alternative to conventional sanitizers such as peracetic acid (2%). Based on the results of industrial-scale Clean-in-Place tests, an effective Venlyt-based CIP procedure has been established, requiring only 10 minutes of cleaning and eliminating the need for final water rinsing after sanitation for bright beer tanks.
